No Bake Energy Bites

With the New Year here and everyone making resolutions, I decided once again to not make a resolution since I'm terrible at keeping them and just try to do my best with getting back into shape. Now it's not that I'm unhappy with my body, I'm actually 5 lbs less than I was before I was pregnant, but it's just that with nursing I haven't been able to "hit it hard" with workouts and I was missing it terribly bad! Anyways, my goal was to quit nursing at Christmas so I wouldn't have to worry about milk supply when I was working out hard and get back into tip-top shape. Well, I ran to Kroger and was looking at formula, I almost passed out... like literally I thought it was a joke. 26 bucks for something that'll last a week and a half!?!? NO THANKYOU!!! So I decided to suck it up and nurse for 3 more months (well just pump) and save money. Anyhoo, I decided I'd still hit it hard with workouts, but use some frozen milk on the side if my supply went low. She has dropped to 3 feedings though and I'm still pumping 3 and producing fine (TMI, sorry!) so I decided I was ready for my intense workouts again. I picked up Jillian Michaels new video "Ripped in 30" because I LOVE JM and her hardcore workouts... They are SO intense and only 20 minutes.... which is EXACTLY what I need. I need FAST, but tough, and that's what she brings to the table. Anyways, I'm in week 2 and already seeing great results and do feel like I'm going to die sometimes, but it's totally worth it. She has a diet meal plan to go with the workout for "optimal results," but I just picked some of the snacks she had because that's where I fall by the way side is snacks... a long day at work and an early lunch of scarfing food in 20 minutes makes me ready for a snack when I get home. So I've got some quick "go to" snacks for when I get home that's really made me feel fuller and not wanting to keep munching. Anyways, since I'm a CHOC-A-HOLIC, I knew I needed to include something in my day that had some chocolate. I found these on pinterest (which I'm totally not a pinterest person because I don't have time which is good because I'd probably be obsessed, but I was on it one day looking for 1st birthday ideas and came across these) and they are just AWESOME so I had to share. They are called "No-Bake Energy Bites" and I LOVE LOVE LOVE them. They are super easy, yummy, and a quick filler. So I thought I'd share them with all my faithful followers (all 2 of you right!?:) ).

No-Bake Energy Bites:
1 C. oatmeal
1/2 C. peanut butter
1/3 C. honey
1 C. coconut flakes
1/2 C. ground flaxseed
1/2 C. mini chocolate chips
1 tsp. vanillla

Mix everything above in a medium bowl until thoroughly incorporated. Let chill in the refrigerator for half an hour. Once chilled, roll into balls and enjoy. Store in an airtight container and keep refrigerated for up to one week. Enjoy!


Anyways, enjoy these little bites of deliciousness. Even if you're not a big coconut fan, you don't taste it a whole lot and they are semi-healthy with the flaxseed and honey. Anyways, I plan on doing a post later of this cutie
on the stats of our 9 month check-up last week and after I take our 9 month photos since I've been so crazy busy and haven't had a chance... hopefully tomorrow on my DAY OFF! Happy Sunday!
